It's a favorite. Costco ice cream is close, but this homemade custard is the best sweet treat in the world. It's a tedious process and would probably be improved by getting the Kitchen-Aid specific bowl attachment, but right now we have the Kitchen-Aid countertop ice cream spinner thing that works.

🍜 Ingredients

    1. can sub half and half or cream
    1. The nicer the better

📑 Directions

  1. In large saucepan, whisk:
    1. Corn starch
    2. Milk
    3. Sugar
  2. Heat mixture to 175F, while whisking constantly
  3. In small bowl:
    1. Whisk 2 eggs
    2. Acclimate eggs by ladling hot mixture from large saucepan slowly and gently into eggs, so they don't curdle.
    3. Once eggs are properly acclimated to heat, pour eggs into large saucepan
  4. Heat large saucepan on low, continuing to whisk constantly.
  5. Mixture should reach at least 160F, coating the back of a spoon
  6. Remove from heat
  7. Immediately place in ice bath and stir for 2 minutes
  8. Stir in sweetened condensed milk and vanilla
  9. Put wax paper on surface of mixture, put in fridge overnight
  10. Using ice cream maker:
    1. Pour mixture into frozen cylinder, two-thirds full
    2. Fridge the rest of mixture
    3. Let mix spin until thickened (approx 30 minutes, depending)
  11. Freeze ice cream in tupperware for 2-4 hours minimum before serving
