📑 Directions

  1. Let rest on countertop, preferred one hour but it doesn't matter
  2. Preheat oven to 225 F
  3. Pat steaks dry and generously season with salt and pepper
  4. Place steaks on pan with wire rack
  5. Place in oven for approximately 10 minutes
  6. Flip steaks and keep in oven for approximately 10 minutes
  7. Goal is 10-15 F below preferred cook temp
    Rare (120°F final): Remove from oven at 105°F, about 20–25 minutes.
    Medium-rare (130°F final): Remove from oven at 115°F, about 25–30 minutes.
    Medium (140°F final): Remove from oven at 125°F, about 30–35 minutes.
  8. Let rest, and preheat skillet on range
  9. Sear 60-90 seconds on each side
  10. Sear edges for 15 seconds each
