📑 Directions
- Let rest on countertop, preferred one hour but it doesn't matter
- Preheat oven to 225 F
- Pat steaks dry and generously season with salt and pepper
- Place steaks on pan with wire rack
- Place in oven for approximately 10 minutes
- Flip steaks and keep in oven for approximately 10 minutes
- Goal is 10-15 F below preferred cook temp
Rare (120°F final): Remove from oven at 105°F, about 20–25 minutes.
Medium-rare (130°F final): Remove from oven at 115°F, about 25–30 minutes.
Medium (140°F final): Remove from oven at 125°F, about 30–35 minutes. - Let rest, and preheat skillet on range
- Sear 60-90 seconds on each side
- Sear edges for 15 seconds each
