  1. Let rest
  2. Preheat grill/smoker/oven 200-225
  3. Fatback up, cut filets at three finger width
  4. Score fat
  5. Fold into a "C" shape, with fat on the outside
  6. Churrasco skewers through the "C"
  7. Towel meat to remove moisture
  8. Liberally apply salt and pepper all over
  9. Put in grill, off flame
  10. 10ish minutes and flip
  11. 10ish minutes and pull off (120 F ish?)
  12. Let rest 15 minutes
  13. Sear all around, rotating every minute
  14. Let rest 10 minutes
  15. Serve
