- Preheat grill/smoker/oven 200-225
- Fatback up, cut filets at three finger width
- Score fat
- Fold into a "C" shape, with fat on the outside
- Churrasco skewers through the "C"
- Towel meat to remove moisture
- Liberally apply salt and pepper all over
- Put in grill, off flame
- 10ish minutes and flip
- 10ish minutes and pull off (120 F ish?)
- Let rest 15 minutes
- Sear all around, rotating every minute
- Let rest 10 minutes
- Serve
