📑 Directions

  1. Sprinkle salt and pepper on chicken
  2. Dredge in flour to coat
  3. Large heavy sauté pan:
    1. Preheat pan on medium heat
    2. Add oil
    3. Add chicken
    4. Sauté until browned - roughly 5min per side
    5. Transfer to plate
  4. Add bell pepper, onion, garlic, oregano to same sauté pan and sauté until onion is tender, roughly 5min
  5. Add wine and simmer until reduced by half, approx. 3min
  6. Add tomatoes, broth, and capers
  7. Return chicken to pan, turning and covering in sauce
  8. Bring to simmer over medium heat, approx 30min thighs, 20min breasts
  9. Transfer chicken to plate
  10. Boil sauce for 3min
  11. Spoon excess fat from top
  12. Spoon sauce over chicken and pasta, add basil
