  1. Soak dry beans for 8-24 hours
  2. Remove floating beans and rinse thoroughly with cold water
  3. If adding garlic and onions, etc., put some oil in and cook until fragrant
  4. Add beans and stock until covered by 2-3 inch of liquid
  5. Bring to boil and add salt
  6. Skim off foam and discard
  7. Cook covered or uncovered for 2 hours or until tender
