- Soak dry beans for 8-24 hours
- Remove floating beans and rinse thoroughly with cold water
- If adding garlic and onions, etc., put some oil in and cook until fragrant
- Add beans and stock until covered by 2-3 inch of liquid
- Bring to boil and add salt
- Skim off foam and discard
- Cook covered or uncovered for 2 hours or until tender
